Mediterranean Quinoa & Charred Orange Salad

This bright, refreshing Mediterranean-inspired quinoa salad is a great combination of sweet, savory, and tangy flavors. The quinoa provides a protein-rich base, while the caramelized orange slices bring out a slightly smoky citrus note. The salty feta and crunchy pumpkin seeds add a lovely contrast to the juicy cherry tomatoes and chickpeas.

Ingredients:

- 1 cup cooked quinoa (cooled)

- ½ orange, thinly sliced

- ½ cup cherry tomatoes, halved

- ¼ cup crumbled feta cheese

- ¼ cup chickpeas (rinsed and drained)

- 2 tablespoons toasted pumpkin seeds

- 2 tablespoons chopped fresh mint

- 1 tablespoon extra virgin olive oil

-1 tablespoon balsamic glaze

Instructions:

1. Char the orange slices for added depth – Heat a dry pan over medium-high heat and place the thin orange slices directly on the surface. Let them sear for about 30 seconds per side, just until you see some browning and caramelization. This step intensifies their sweetness and adds a slight smokiness. Remove and set aside.

2. Assemble the salad base – In a large mixing bowl, combine the cooled quinoa, halved cherry tomatoes, chickpeas, and crumbled feta cheese. Toss everything gently to distribute the ingredients evenly.

3. Add the final toppings for texture and flavor – Arrange the charred orange slices over the salad, then sprinkle with toasted pumpkin seeds and chopped mint for freshness.

4. Dress the salad just before serving – Drizzle the olive oil and balsamic glaze over the top and give everything a light toss to coat the ingredients.

5. Serve fresh and enjoy – This salad tastes best when freshly prepared but can be stored in the fridge for up to a day.
